A cart on Saturdays, now a counter every day
Ruben and Elena Fuentes started selling tacos out of a folding table at the Garland flea market, using Elena's mother's salsa recipes and whatever cuts the butcher had that week. Neighbors kept showing up, so in time the table became a cart, and the cart became the counter you can walk into today.
Their son Danny runs the grill most mornings, their daughter Marisol handles catering, and the salsas are still made from Elena's notes. Everything is cooked to order, in small batches, the way it was on that first Saturday.
